We are the kombu store founded in the Edo period. We sells specializes in kombu over more than 160 years in the city of Osaka. Kombu is a material of dashi stock and also eaten as shio-kombu. Kombu contains natural glutamic acid – an umami-providing amino acid – that draws out the taste of other foods.

What is Dashi?

Dashi is a class of soup and cooking stock used in Japanese cuisines. Japanese dashi is light but packed with umami. It is a fundamental ingredient in many Japanese dishes. Dashi is made from kombu (dried edible kelp), katsuobushi (bonito flakes), or a combination of them. Dashi forms the base for miso soup, clear broth, noodle broth, and many kinds of simmering liquid. Dashi can be made easily even if there is no experience to you. Our item also contains recipes of dashi ( kombu dashi, katsuo dashi, kombu and katsuo dashi).

What is Shio-kombu?

Shio-kombu is kind of tsukudani. Tsukudani is a japanese traditional preserved food. Tsukudani is a method of cooking something with soy sauce, sake and sugar until it’s very dark, quite salty and sweet too. It’s a preserving method, since the salt and sugar greatly increase the keeping qualities of the food. It is usually eaten with rice.
